Looking for a quick and easy main course? This meatloaf will be a favorite, with your whole family. It is truly an easy family friendly recipe. My favorite memory, is when my mother would cook this on Sunday's, after we got home from church. My sister's and I would set the table, then help our mother with the side dishes. This is a special recipe to me, because my mother was diagnosed with Alzheimers, about 5 years ago, so therefore, no longer cooks. I hope you enjoy this as much as my family did. EASY OATMEAL MEATLOAFPreheat oven to 350 degrees. Spray cooking oil onto 2 8x4 loaf pans. Take a large bowl and mix together:
Mix thoroughly with hands, making sure the oatmeal gets fully incorporated. Shape into loaf pans. Put 4 strips of raw bacon across each loaf. Bake for 20 minutes. Take out of oven and pour a thin line of ketchup on top of each. Bake for 20 more minutes. Take both loaves out of oven and let set for 10 minutes, then slice and arrange onto a large platter. Gravy (optional) Pour drippings from meatloaf pans, into small sauce pan. Bring the drippings up to medium heat, add 2 tablespoons of all purpose flour, while constantly stirring with wooden spoon, till reaches a boil, then add 1/2 cup buttermilk, stir till gravy thickens, add up to one more tablespoon, if needed. Pour gravy over meatloaf slices or into separate bowl. Possible side serving suggestions: Potatoe salad or creamed potatoes with green beans or grilled asparagus. Tossed salad and cooked carrots. Dessert: Apple cobbler or chocolate brownies.
