For our Low Carb Meatloaf Recipe we decided to stay away from the recipes that include Texturized Soy Protien and instead rely on the old fashioned recipe using Cereal Grains, Quaker Oats in this recipe, instead of the Bread Crumbs. You can also simply omit the bread crumbs from most recipes reducing the Carbohydrates instantly with very little loss in flavor. For our Low Carb Meatloaf Recipe you will need the following ingredients:
Easy Meatloaf Recipe Pic

1 1/2 pounds Lean Ground Beef
1 Egg
1/4 cup Milk
1 cup Quaker Oats
1 Onion, chopped
1 teaspoon dried Thyme
2 tablespoons Mustard
3 tablespoons dried Parsley
Salt and Pepper to taste

Preheat oven to 350°.

Beat the Egg and add the 1/4 cup Milk, mix together and pour over the Quaker Oats allowing it to soak for 30 minutes. After the Quaker Oats have been soaked add the rest of the ingredients and mix well.

Put into a loaf pan or form into a loaf and place on baking sheet.

Bake for 35-45 minutes or until brown and crusty on the outside.

Let the Meatloaf rest on a rack for at least 10 minutes before slicing and serving.
