Anyone can make this very simple Bacon Meatloaf Recipe quickly. It has picante sauce instead of chopping onions, garlic, bell peppers and adding tomato sauce, which greatly decreases preparation time. This bacon meatloaf will keep for up to three days in the refrigerator or may be cut into slices and frozen in baggies for future meals.

Easy Meatloaf Recipe Pic

Ingredients:

  • 4 pounds of ground chuck
  • 1-16 ounce jar of mild picante sauce
  • 1 pound of bacon divided
  • 2 cups of bread crumbs-plain
  • 4 eggs
  • 2 tablespoons Worcestershire sauce
  • 4 slices of American cheese

Preheat oven to 350 degrees. Prepare 9 by 13 baking dish with non-stick cooking spray and set aside.

Cook 1 pound of bacon until crispy and place on a plate covered in paper towels. Set aside to cool.

In large mixing bowl, mix ground chuck, picante sauce, breadcrumbs, and Worcestershire sauce with your hands until thoroughly mixed. Beat eggs and add to mixture. Mix thoroughly.

Crumble 3/4 pound of the cooled bacon into about 1-inch pieces. You can either cut into pieces or just crumble with your hands. Add bacon to the meatloaf mixture and mix well.

Place mixture in the middle of the prepared baking dish and form into a rectangular meatloaf shape.

Bake in preheated oven for 1 hour. Remove pan and pour off all excess grease. Top the meatloaf with the four slices of American cheese by placing them on top at an angle so that they appear as triangles. Top with remaining cooked and cooled bacon slices by placing them vertically across the cheese.

Return to oven for 10 minutes or until cheese is bubbly and melted and bacon on top is crisp.

Let the meatloaf cool 10 to 15 minutes before slicing.

Meatloaf Recipe Additions: 1/2 cup of parmesan cheese added to the meatloaf mixture before baking adds an extra cheesy flavor.

Seasoned breadcrumbs may be added instead of plain breadcrumbs for extra flavor.

Either canned or fresh mushrooms may be added to the meatloaf mixture. 8 oz of either is a good addition.

If you like spicy food, medium or hot picante sauce can be substituted for the mild flavor.
